On this experience you’ll learn the true story of how chocolate becomes the world’s favourite sweet, a bitter sweet tale of hard work, artisanship and how business can be a force for good.

We start with our special welcome to Jamaica. We’re located on the edge of the Blue Mountains overlooking Kingston.

We’ll look down across the city towards the harbour as I give a brief history of the island and the historical use of cacao.

We then get to know each other before we make our inclusion bars.

I’ll tell you about how I went from a BBC Correspondent to a chocolate maker before I explain how we go from the raw ingredients to the finished yummy product.

I’ll show you how to hand temper chocolate, from our original development kitchen using a bowl, a table and a spatula.

Before I walk you through creating your own custom made inclusion chocolate bars.

We then go right into the farm, driving over a river bed, to have a closer look at the cacao estate.

We’ll introduce you to the pods up close, we’ll look inside the fruit and I’ll explain how the beans are fermented on the farm and how the nibs are processed before we unveil your bespoke bars.

Due to the fact I'll be using multiple cameras this will be best to watch on a PC so that you can maximise views and also see your fellow experiencers. Especially when we get into the tasting segment.

I'm a former BBC News foreign correspondent, my parents are Jamaican and when I discovered the amazing cacao here on the island, I decided to start my own chocolate factory! We've since won a number of international awards for our bars and work alongside chocolate companies from around the world on sourcing the best fine flavour cacao across the Caribbean. We're a farm to bar company, from harvest and fermentation through to making the finished product, that now grace some of the most exclusive hotels and villas in the Caribbean, but ultimately I really like sharing my love of all things chocolate. I'm a history buff so I like linking the past and the present to show the development of the world's favourite confectionary. That's why we call the experience, from seed to bar.

Our experience was wonderful! Nick is super engaging and knowledgable, and was a great instructor - he regularly checked in with everyone in our group of 10 to see how we were getting on with our chocolate tempering and made sure to connect with each of us. He also explained the growing and production process for turning cacao into chocolate in a really vivid way - he's a great storyteller. Our group came away from the experience with smiles on our faces - we'd happily have paid double to have the experience and couldn't recommend it more. Thanks, Nick!

I couldn't have imagined a better host than Nick! He was incredibly friendly, engaging, informative and made learning about chocolate personalized, historical, and fun. I recommend this to anyone, whether chocolate lover or lukewarm to chocolate - Nick will make this experience enjoyable regardless through his amazing personality and ability to facilitate connection. It was also a plus to have his wonderful partner show us the beautiful landscape around his home throughout.

What a lovely way to spend an hour! I told my husband I didn’t need gifts for my 50th bday, but would prefer an “experience”. Well, Covid made that difficult, but this class was the perfect solution! Got a great education about how chocolate is made, enjoyed beautiful pictures from Nick’s home in Jamaica, and got some new-found confidence in tempering chocolate they way they do on the baking shows 😂! Nick is a great storyteller and kind, patient teacher!

Better than I anticipated. Nick was very informative and even inspirational! His friendly nature really made the new experience in chocolate fun and easy while imparting the history and origins of this wonderful treat!
